Look, I’m just gonna to say it: I’m not crazy about chocolate.
I know, I know, but really, it’s just not generally my jam, and luckily, it’s not my husband’s favorite either. But, whereas I generally don’t have much of a sweet tooth at all (Team Salty!Crunchy all the way!), Wes allllllways wants “something sweet” after dinner.
So, in trying to be a more dutiful wife (it’s a stretch, but stay with me), I’ve been trying to devise easy, simple desserts that take few ingredients and little skill, since I’m NOT a baker.
Lately, I’ve hit on a winner: strawberry brownies and lemon brownies. And even better – they’re SUPER EASY and crazy cheap!
Here’s how it goes down…
Strawberry (or Lemon!) Brownies
1 box of strawberry (or lemon!) cake mix
2 eggs
1/3 cup of oil
1 cup of powdered sugar and a bit of water or milk (to make icing)
Preheat the oven to 350° and spray an 8″ square pan with cooking spray.
Mix the cake mix, eggs and oil together until well combined (I don’t even bother with dirtying a hand mixer, I just get in there with a spoonula).
Spread batter evenly into the pan (yep, it’s thick!) and then bake for 15 minutes until just set.
Let cool for a while on a wire rack while you mix up the powdered sugar and milk (or water) until smooth, then spreading it over the top evenly. Tada!
