Zucchini is a veg I can always get down with, and I like any meal that’s no more difficult than a little browning, a little microwaving, and a little cheese melting (or a lot, if you’re into that like I am). 😉 Thus, I present the humble (but tasty!) zucchini boat!

Zucchini Boats
2 large zucchini
1 pound of ground beef
marinara sauce (maybe 1/2 to 3/4 cup)
1 large egg, beaten
1/4 cup breadcrumbs
1 cup of CoJack cheese, divided
seasonings of your choice (salt, pepper, dried oregano and Cavender’s is what I used)
Cut zucchini in half lengthwise, then cut a thin slice from the bottom so they will sit flat. Scoop out the pulp, leaving just the shells of the zucchini. Place into an microwave-safe dish (I use a glass 8X8 pan), then cover and cook for 3 minutes on high. Drain if needed and set aside.
While that cooks, brown your beef (feel free to add back some of that zucchini pulp or onion if you want to bulk this up) then drain. Stir in the marinara sauce, egg, breadcrumbs, seasonings and half the cheese. I usually just add the marinara until I like the look of the consistency.
Spoon some of the mixture into each shell, then microwave uncovered on high for 4 minutes. Sprinkle with the rest of the cheese, then microwave for another 3-4 minutes until zucchini is tender.
Tasty with a side salad, bread, or a veg!
