I feel sort of guilty even calling this a “recipe” post.
But, you know those evenings when you get home from work and you just aren’t feelin’ the cooking vibe, but you don’t want to do the shame drive to McDonald’s? This one is quick and easy and takes zero motivation, so let’s go!
I give you… tomato tortellini soup.
Tomato Tortellini Soup
2 cans of tomato soup or tomato bisque
1 9 ounce package of shelf-stable tortellini (any flavor you like!)
((I also like the premade glass jars of tomato soup from Aldi so you don’t even have to have MILK)
Combine the soup and tortellini and cook over medium heat until it comes to a boil, stirring occasionally (or follow the tortellini cooking times). Reduce heat and let warm through.
A swirl of olive oil, a handful of good parmesan, and/or a dollop of pesto and a slice of crusty bread make this a winner!
I make sure to stock up on multiple packages of the tortellini for the pantry – they are also great just with butter and parm, or you can use a broth base and add spinach, sausage, anything!
