Springtime Cake

We’re having a potluck at work in a few days, and the first thing that sprang into mind as a good, shareable, tasty option that everyone loves is what I call Springtime Cake because it’s full of citrusy, happy, spring-y flavors to me! Plus, I like that name better than “Mandarin Orange Cake”. In any case, it’s super easy… let’s go!

1 box of yellow cake mix
10 ounce can of mandarin oranges, undrained
4 eggs
1/4 cup of oi
l

Beat all the ingredients together until well blended, then bake as directed.

Cool completely.

15 ounce can of crushed pineapple
1 tub of Cool Whip
3.4 ounce box of instant vanilla pudding

Blend together the three ingredients, then gently spread over your cake. Enjoy!
