Cheddar Sausage Muffins

For years, my library would have a breakfast potluck once a month, and I hit on these as my winning, go-dish bring-along whenever it was my turn… cheddar sausage muffins. They were always a hit!

Let’s do this:

1 pound (roll) of pork sausage
1 can cheddar cheese soup, undiluted
1 cup shredded cheddar cheese
2/3 cup of water
3 cups of Bisquick

Preheat oven to 350°.

In a skillet over medium heat, cook sausage fully then drain.

In a bowl, combine soup, cheese, and water. Stir in the Bisquick until blended, then add sausage until well combined.

Fill greased muffin cups about 3/4 full.

Bake for 20-25 minutes, then cool about 5 minutes before removing.
