Manwich Mushroom Meatloaf

Trying saying that three times fast… Manwich Mushroom Meatloaf!

I don’t remember where I found this recipe, but it’s been in my little handwritten recipe book for years and years, so I’m guessing… I found it maybe in grad school? Either way, it’s a staple in my house!

I never had sloppy joes growing up – I didn’t even know what they were – so this feels like a delicious treat and is stupidly easy… my favorite kind of cooking on lazy days, and I almost always have the ingredients on hand. Let’s go!

Manwich Mushroom Meatloaf

6 ounce can of sliced mushrooms
15 ounce can of Manwich sauce
1 pound of ground beef
1 cup of quick oats
1 egg
garlic powder/Italian seasoning/dealer’s choice

Preheat the oven to 350°.

Mix together half the Manwich sauce with all the other ingredients in a bowl until blended. Season with your heart. Don’t overwork the beef or it’ll get tough!

Bake for 30 minutes. Pour the other half of the can of Manwich on top of the meatloaf and cook for another 30 minutes until the meat is no longer pink.

Now, this makes a loose-goosey kind of meatloaf… and the very best way, in my opinion, to eat is is on a couple of pieces of good white bread SLATHERED in mayo. Healthy? No. Delicious? Damn right. Enjoy!
