I recently bought my first rice cooker (I know, I know we’re behind the times), and I’ve been loving any and all recipes I can find that call for rice… it’s been a lot of Buddha bowls and stroganoffs layered over rice, but I was thrilled to find an old recipe I clipped ages ago that calls for rice… Pizza Rice Casserole! Let’s do this!
1 pound of ground beef
16 ounces of tomato sauce
1 teaspoon of sugar
salt and pepper to taste
garlic powder with your heart 😉
oregano til it looks right 😉
2 cups of cooked rice
1 cup of cottage cheese
1 cup of mozzarella cheese
Brown your ground beef and drain, then add your tomato sauce, sugar and seasonings and stir to combine. Bring to a boil, then reduce heat and simmer for about 15 minutes until it thickens.
Combine cooked rice and cottage cheese and spoon half the mixture into a greased baking dish. Top with half the meat mixture. Repeat the layers then top with mozzarella cheese.
Bake, uncovered, at 325° for 30-35 minutes or until heated through.
