Wes and I made it a goal (okay, I made it a goal and he nodded when I asked him) to come up with a handful of go-to dinners that either of us could make, regardless of exhaustion, in a few minutes flat, with not a lot of ingredients (and that WASN’T frozen pizza). Hands down, the winner so far is… the SSB.
Inspired by a post over at Cup of Jo, I’ve adapted this to something we both dig, so here goes!
Sausage, Spinach, and Beans (SSB)
roll of breakfast sausage
bag of fresh spinach
can of white beans (cannellini, great northern, it all works)
gaaaaarlic 🙂
Salt, pepper, and any seasonings you dig (we like Cavender’s)
Parmesan cheese
Saute the sausage with the garlic…

Add handfuls of spinach to wilt down (it always takes more than you think it will!)…

Toss in a drained can of beans and then season how you like…

Top with Parm and serve!

If you want to stretch the recipe, you can also add a bunch of chicken broth and make it into a soup, served with crusty bread – delish!
