I remember having dinner at my sister’s house and my brother-in-law, who is a fabulous cook, declaring to me “you are a fan of the cruciferous veggies, aren’t you?” as I snarfed another helping of cauliflower. Why yes, yes I am. 🙂
I have a love-hate with some veg, but broccoli is always a winner… especially when with cheese and a creamy base. And thus, my foolproof broccoli puff! Enjoy!
Broccoli Puff
2 boxes of chopped frozen broccoli (10 ounces)
2 eggs, beaten
1 cup of mayonnaise
1 can cream of mushroom soup
1 cup of shredded cheese of your choice
1 cup of breadcrumbs of your choice
Cook the broccoli according to the instructions. Combine eggs, mayo, soup and cheese in a bowl, then fold in the broccoli and mix well.
Pour into a casserole dish and top with breadcrumbs. Bake for 30 minutes at 350°.
Enjoy as a tasty side for your dinner!
